Do you know of any good vegetarian cookbooks? I use Jeanne Lemlin's Quick Vegetarian Pleasures quite a lot (my husband is a vegetarian), but I haven't found many others that are as good (including Lemlin's other books). The problem thing is, my husband doesn't like grains like couscous, bulgur, barley and etc. (he's a pasta guy) and he hates eggplant and portabello/portabella mushrooms, all of which seem to be a staple in vegetarian cooking--and the resulting cookbooks.

I love love LOVE Deborah Madison's Vegetarian Cooking for Everybody. I picked it up after hearing two friends rave about it as if it were their favorite episode of a TV show.
I was also going to recommend Deborah Madison. Myra Kornfield's The Voloptuous Vegan and The Healthy Hedonist (this one isn't entirely veg) are both good, despite the lack of pictures, and include some interesting things you can do with dumpling wrappers that might appeal to a pasta-lover.
Micole and Janine, thanks for the suggestions! I'm going to check out all the books you suggested.
